Brian's Menu...
You will need:
- Salmon fillets
- Yellow rice
- 3 Roma tomatoes
- White onion
- Jalapeno
- Cilantro
- Sour cream
- Sriracha chili sauce
- Burrito size tortillas
- Shredded Mexican blend cheese
Prep:
- Cook salmon and set aside to cool. flake once it's cool
- Make yellow rice (see yellow rice recipe)
- Dice tomatoes, onion, cilantro and jalapeno for Pico de gallo
- Mix sour cream and Sriracha sauce in a small bowl to taste
- Layer cheese, yellow rice, salmon, pico and sour cream mixture. Fold into a Burrito!!
You will need:
- 1 can fire roasted tomatoes (regular diced is fine, but fire roasted has more flavor)
- White onion
- 2 large cloves garlic
- 1 large or two smaller jalapenos
- 1 small serano pepper
- Cilantro
Instructions:
- Empty can of tomatoes into blender
- Add two cloves garlic
- Cut about a 1/2 inch thick slice of white onion, cut into fourths and add to blender
- Add Jalapenos and Serano pepper
- Add small handful of cilantro
- Blend until salsa is thin, but still a little chunky
