Chicken Tacos

You will need:
  • 2 chicken breasts (thawed) 
  • Pace picante medium salsa
  • Red onion
  • Cilantro
  • Shredded cheese
  • Taco size tortillas
Boil chicken breasts in about 2 cups salsa. (enough to cover chicken in a sauce pan)
Chop red onion and cilantro to set aside
Shred chicken after cooked
Warm tortillas

Pizza Balls

You will need:

1. 3 cans Pillsbury Buttermilk Biscuits 

2. 56 pepperoni slices
3. Block of Colby cheese
4. 1 beaten egg
5. Parmesan cheese
6. Italian seasoning
7. 1 jar pizza sauce 

Cut the block of cheese into 1in x 1in squares. 

Flatten a biscuit out and stack 2 pepperoni, a hunk of cheese, and another pepperoni or 2 on top. 
Gather up the edges of the biscuit. Make sure there are no gaps on the bottom where the dough came together to make sure the cheese doesnt ooze out durring baking!
Line up the rolls in a greased 9x13 in. pan. 
Brush with beaten egg. Sprinkle with Parmesan cheese and Italian seasoning. Bake at 425°F for 18-20 minutes. 

Use the pizza sauce for dipping :)

Breakfast Quesadilla

You will need:
  • Egg
  • Cheese
  • Re-fried Beans
  • Red onions (optional)
  • Tortilla
  • Bacon, Sausage, or lunch meat
Prep:
  • Scramble the egg(s)
  • Layer beans, cheese, egg(s), onion (optional) bacon, sausage, or lunch meat
  • Fold other side of tortilla over and brown tortilla on each side so contents get warm.
I used left over Linguica in this one...

Linguica Sandwiches

You will need:
  • Silva Linguica 
  • French rolls
  • Red onion
  • Mustard
Prep:
  • Cut linguica in half, then cut that half long ways to expose the inside of the link.
  • Place link in a hot pan and cook both sides. 
  • After Linguica is done, place in bun, add mustard and red onion.

Simple Marinara and Raviolis

You will need:
  • 1 can tomato paste
  • 1 can diced tomatoes 
  • White onion
  • Garlic
  • Butter
  • Salt
  • Oregano
  • Marjoram 
  • 1 1/2 cup water
Prep:
  1. Dice white onion and garlic
  2. Sweat onion and garlic in sauce pan until tender
  3. Add water, tomato paste, can of diced tomatoes
  4. Whisk or stir until paste is thin.
  5. Add herbs: Oregano, Marjoram and salt
  6. Simmer about an hour to let all flavors marry and onions and tomatoes to get completely soft.
  7. At about 45 minutes, add about 2 tblsp butter and let melt into sauce. 
     ** Optional: Add mushrooms before simmering for an hour.

Salmon Burritos

You will need:
  • Salmon fillets
  • Yellow rice 
  • 3 Roma tomatoes
  • White onion
  • Jalapeno
  • Cilantro
  • Sour cream
  • Sriracha chili sauce
  • Burrito size tortillas
  • Shredded Mexican blend cheese
Prep: 
  1. Cook salmon and set aside to cool. flake once it's cool
  2. Make yellow rice (see yellow rice recipe)
  3. Dice tomatoes, onion, cilantro and jalapeno for Pico de gallo
  4. Mix sour cream and Sriracha sauce in a small bowl to taste
  5. Layer cheese, yellow rice, salmon, pico and sour cream mixture. Fold into a Burrito!!

Hot Salsa!

You will need:
  • 1 can fire roasted tomatoes (regular diced is fine, but fire roasted has more flavor)
  • White onion
  • 2 large cloves garlic
  • 1 large or two smaller jalapenos
  • 1 small serano pepper
  • Cilantro
Instructions:
  1. Empty can of tomatoes into blender
  2. Add two cloves garlic
  3. Cut about a 1/2 inch thick slice of white onion, cut into fourths and add to blender
  4. Add Jalapenos and Serano pepper
  5. Add small handful of cilantro
  6. Blend until salsa is thin, but still a little chunky
